Keep your coffee beans fresh longer with the Bean Keeper Coffee Canister. Learn proper storage techniques, common mistakes, and how Airscape technology works.

Quick answer

Use the Bean Keeper Coffee Canister with the patented Airscape® lid to push out excess air and keep your beans fresh for weeks. Store in a cool, dark place away from heat and moisture.

Why air is the enemy of fresh coffee

Coffee beans release CO2 after roasting, but oxygen accelerates staling and loss of aroma. The Bean Keeper's Airscape® Technology works by pressing out air before sealing, creating a near-vacuum environment that slows oxidation.

This is especially important if you buy whole beans in bulk or use a Breville espresso machine, where consistent freshness directly affects shot quality and crema.

Where to place your canister

Keep the canister in a cupboard away from the stove, dishwasher, or direct sunlight. Heat and humidity speed up staling, even inside an airtight container. A countertop near your grinder is fine as long as it's not above a heat source.

Do not store the canister in the refrigerator or freezer unless you plan to keep beans there long-term and let them come to room temperature before grinding—otherwise condensation can ruin the beans.

Step-by-step: How to use the Bean Keeper for maximum freshness

  1. Fill the canister with fresh beans: Pour whole coffee beans into the canister, leaving about 1 inch of headspace at the top. Do not overfill—the Airscape disc needs room to press down. Overfilling prevents the disc from sealing properly, leaving air inside.
  2. Press the Airscape lid down: Place the lid on the canister and push the disc firmly down until you feel resistance. You should hear a slight hiss as air escapes. Twist the knob to lock it in place. If the disc doesn't stay down, twist the knob clockwise until it clicks.
  3. Open only when you need beans: Twist the knob counterclockwise to release the seal, then lift the lid. Scoop out the amount you need, reseal immediately, and press the disc down again. Each time you open the canister, fresh air enters—so reseal quickly to minimize exposure.
  4. Clean the canister monthly: Wash the stainless steel body and lid with warm soapy water. Rinse and dry thoroughly before refilling. The disc can be wiped clean with a damp cloth. Residual coffee oils can go rancid and affect the taste of new beans.
